Yesterday, we celebrated the two year anniversary of the day we met Natalie. It is so sweet to remember the moment this sweet little girl was placed in our arms and became part of our family. We are so grateful for the opportunity to be her parents! As part of our "gotcha day" celebration, I prepared a Colombian meal for dinner. We had empanadas with salsa picante and frijoles antioquenos. Yummy! It is funny how food can take you down memory lane. I found the second recipe for the beans on the "Raising Colombian Kids" blog listed below. This is such a wonderful blog. I really enjoy reading more about Natalie's birth country.
So, how about a few funny Natalie stories? She is getting to the age that everything that says makes me laugh.
When I served the frijoles antioquenos last night, Natalie says (in her very southern accent), "Yum, butter beans". Do we have the sweetest little country Colombian girl or what?
After two weekends full of birthday parties, I asked Natalie what she wanted for breakfast one morning and she replied, "Birthday cake". When I told her we didn't have any, she started singing Happy Birthday to see if that would help.
As I am typing this blog entry Natalie is watching one of her favorite cartoons, Clifford, the Big Red Dog. In the show, one of the dogs licked its owner on the cheek and .....all the sudden my cheek was very wet and Natalie was laughing hysterically. Let's hope she doesn't replace her normal sweet kisses with dog kisses.
